How to Bottle Homebrew: The Short Answer
To bottle homebrew, confirm fermentation is completely finished with two identical hydrometer readings taken two to three days apart, then dissolve a measured dose of priming sugar — roughly 4 to 4.5 oz (115–130 g) of corn sugar for a 5-gallon batch of typical ale — in boiled water, gently mix it into your beer in a sanitized bottling bucket, fill sanitized bottles to about an inch below the rim, cap them, and store them at room temperature for about two weeks while the yeast carbonates the beer naturally.

Before Anything Else: Prove Fermentation Is Done
This is the one step you are not allowed to skip, so it goes first.
When you seal beer in a bottle with priming sugar, you are counting on the yeast to produce a small, predictable amount of carbon dioxide. If fermentation of the original wort sugars is still creeping along when you bottle, the yeast has extra fuel you didn't account for. The pressure keeps building past your target, and glass bottles can and do burst. Homebrewers call these bottle bombs, and they are genuinely dangerous — flying glass, not just a mess.
The fix is simple and non-negotiable:
- Take a hydrometer reading. Note the specific gravity.
- Wait two to three days and take another. Same beer, same method.
- Bottle only if the two readings are identical and in the neighborhood of the final gravity your recipe expects (most ales finish somewhere around 1.008–1.016, though recipes vary).
A single reading is not enough. A beer at 1.020 might be finished — or might be halfway through a sluggish fermentation. Only stable readings prove the yeast is done. If the number is still dropping, wait and test again; beer is patient.

One more note on ABV: priming sugar itself ferments in the bottle and adds a small bump to the final number — on the order of a quarter of a percent for a normally primed batch. Not nothing, but not enough to change what kind of evening you're having.
How Much Priming Sugar to Use
Priming sugar is measured, not eyeballed. The classic rule of thumb — about ¾ cup of corn sugar for a 5-gallon batch — has carbonated a lot of good beer, but weighing the sugar is more accurate than scooping it, and matching the amount to the beer style is better still.
Here are sensible working ranges for beer that fermented and is resting around 68°F (20°C). Warmer beer holds less dissolved CO2 from fermentation, so it needs slightly more sugar; cooler beer needs slightly less. Per-gallon shorthand: for a typical American ale, figure roughly ¾ to 1 oz (about 20–28 g) of corn sugar per gallon of beer. Scale linearly — a 1-gallon test batch gets one-fifth the sugar of a 5-gallon batch, full stop.
Two firm rules sit behind the table:
- Never exceed about 3 volumes of CO2 in standard bottles. Standard 12-oz crown-cap bottles are engineered for beer-level pressures, not champagne-level ones. Highly carbonated Belgian styles are traditionally bottled in thicker glass for exactly this reason.
- Dose the whole batch, not each bottle — with sugar solution, not dry sugar. Batch priming (dissolving all the sugar in water and mixing it into the full volume of beer) distributes sugar evenly. Spooning dry sugar into individual bottles invites wild bottle-to-bottle variation, including some over-pressurized outliers.
Corn Sugar vs. Table Sugar vs. Everything Else
- Corn sugar (dextrose). The homebrew standard. Ferments fast and clean, dissolves easily. Most calculators and recipes assume it.
- Table sugar (sucrose). Works fine and is already in your pantry. It is slightly more fermentable by weight, so use about 10% less than the corn sugar amount. Flavor impact at priming quantities is negligible.
- Dried malt extract (DME). Traditional and pleasant, but it ferments less predictably and more slowly than simple sugars, so carbonation takes longer and calculators matter more.
- Honey, maple syrup, etc. Possible, but their sugar content varies jar to jar, which makes dosing imprecise. Save them for experiments, not your first batches.
Whatever you choose, weigh it on a kitchen scale. Volume measures of sugar vary with how the sugar settles; grams do not.
Bottling Day, Step by Step
Plan on about two hours the first time. You will need a bottling bucket with a spigot, a bottle filler wand, tubing, caps, a capper, sanitizer, and roughly 50 clean 12-oz bottles for a 5-gallon batch (the math says up to 53; losses to trub and clumsy pours say have spares). 1. Sanitize everything that will touch beer
Clean is not sanitized. First remove visible soil with a brush and unscented cleaner, then sanitize with a no-rinse acid sanitizer such as Star San, mixed per the label (for Star San, 1 oz per 5 gallons of water) with a minute or two of wet contact time. Sanitize bottles inside, caps, the bottling bucket, spigot, tubing, bottle filler, and your racking equipment. Don't fear the foam — no-rinse sanitizer foam left in bottles is harmless to you and your beer.
A dishwasher's heated sanitize cycle can handle bottles, but it won't scrub out dried gunk — inspect each bottle against a light first.
2. Boil the priming solution
Dissolve your weighed sugar in about 2 cups (roughly 500 ml) of water, boil it for a few minutes to sanitize it, cover, and let it cool while you work. Pour it into the empty bottling bucket first so the beer mixes with it as the bucket fills.
3. Rack the beer onto the sugar
Siphon the beer from the fermenter into the bottling bucket, keeping the tubing outlet below the liquid surface. Two goals here: leave the layer of sediment (trub) behind in the fermenter, and avoid splashing. Oxygen picked up at bottling is the fastest route to wet-cardboard flavors a few weeks later. The gentle whirlpool created by filling usually mixes the priming solution evenly; if you stir, do it slowly with a sanitized spoon — no splashing.
4. Fill the bottles
Attach the bottle filler wand to the spigot tubing, push it to the bottom of each bottle, and fill until the beer reaches the very top. When you withdraw the wand, its displaced volume leaves almost exactly the right headspace — about an inch below the lip. That headspace is intentional; don't top it up.
5. Cap immediately
Set a sanitized cap on each bottle and crimp it with your capper. Use pry-off bottles only — twist-off bottles have thinner glass at the neck and don't seal reliably with a standard bench or wing capper. Give each cap a quick twist-test tug. Rinse the outside of the bottles, and you're done with the wet work.
How Long Bottle Conditioning Takes
Bottle conditioning is fermentation in miniature: the yeast still in suspension eats the priming sugar and, because the bottle is sealed, the CO2 dissolves into the beer instead of escaping.
The standard timeline for ales:
- Weeks 1–2: Store bottles upright at roughly 65–75°F (18–24°C), out of direct light. Room temperature, not the fridge — cold puts the yeast to sleep before the job is done.
- End of week 2: Chill one bottle for 24–48 hours, then open it. Most ales are fully carbonated at two weeks. If it's flat or soft, give the batch another week at room temperature and test again.
- Weeks 3–4 and beyond: Carbonation is usually set, but flavor keeps improving. Green, yeasty edges smooth out; the beer clears as yeast settles. Bigger, stronger beers reward a month or more.
Definitional summary: bottle conditioning typically takes two to three weeks at room temperature — about two weeks to carbonate, plus optional additional weeks that improve clarity and flavor.
Chill bottles for at least a day before serving; cold beer holds its CO2 better, and the sediment layer compacts on the bottle's bottom. Pour in one steady motion and leave the last quarter-inch of yeast behind — or don't, it won't hurt you, but the pour will be cloudier.
How to Avoid Bottle Bombs: The Checklist
Every bottle bomb traces back to one of a handful of causes. Rule them all out and the risk drops to essentially zero:
- Stable gravity before bottling. Two identical readings, two to three days apart. This prevents the single most common cause: bottling an unfinished beer.
- Weighed, calculated priming sugar. No heaped scoops, no "a little extra for good measure," never above ~3 volumes of CO2 in standard glass.
- Batch priming, evenly mixed. Uneven sugar means some bottles get a double dose.
- Sound bottles. Pry-off, unchipped, uncracked. Retire any bottle with a nicked lip.
- Sanitation. Wild yeast and bacteria can slowly ferment sugars normal brewer's yeast leaves alone, building pressure over weeks. Sanitize like it matters, because it does.
- Sensible storage. Condition bottles in a closed box or plastic tub, somewhere people and pets don't linger. If a batch ever gushes wildly on opening or you find a burst bottle, refrigerate the survivors immediately — cold slows the yeast and lowers the pressure — and open the rest outdoors, covered, wearing eye protection.
