Before the boil, ordinary cleanliness is fine — the boil itself sanitizes the wort. The critical window opens the moment your wort drops below boiling temperature. From that point on, everything that touches the wort or beer must be sanitized: fermenter, lid, airlock, spoon, siphon, hydrometer, thermometer, your hands if they go near openings.

Mix your no-rinse sanitizer according to the label directions, wet every surface thoroughly, and give it the contact time the manufacturer specifies — typically a minute or two. Foam and residual droplets of a properly mixed no-rinse sanitizer are harmless to your beer; brewers have a saying about not fearing the foam. Wild yeast and bacteria won't make beer dangerous, but they will reliably make it sour, phenolic, or otherwise unpleasant — and infection is the number-one killer of first batches.

Step 3: Brew Day — Steep, Then Boil

With a typical extract kit, brew day looks like this:

  1. Heat 2.5–3 gallons of water in your kettle to around 150–160°F (65–71°C).
  2. Steep the specialty grains (if your kit includes a grain bag) for about 20 minutes, like tea. Don't let the water boil with grains in it — hot enough for long enough extracts harsh tannins. Lift the bag out and let it drip; don't squeeze aggressively.
  3. Remove the kettle from heat and stir in the malt extract until fully dissolved. This matters: extract that settles on the bottom of a heated kettle will scorch and flavor the whole batch. Return to heat only when dissolved.
  4. Bring to a boil and add hops on the kit's schedule. Most recipes boil for 60 minutes. Bittering hops go in early (a long boil extracts bitterness); flavor and aroma hops go in during the last 15 minutes or at flameout (their delicate oils boil off quickly).
  5. Watch for boilover. As wort first reaches a boil it foams up fast — the "hot break." Stay at the kettle with the heat ready to cut. A spray bottle of water knocks foam down in a pinch.

Step 6: Ferment — and Verify It's Done

Never bottle on schedule alone. Bottle only when fermentation is verified complete — meaning your hydrometer shows the same final gravity (FG) reading two to three days apart.

If gravity is still falling, the yeast is still producing CO2. Stable readings — say, 1.012 today and 1.012 three days from now, in the range your recipe predicts — are your green light.

Bottling turns flat beer into carbonated beer using the yeast still in suspension:

  1. Sanitize bottles, caps, bottling bucket, siphon, and bottle filler.
  2. Make a priming solution.
